Brian Bradley, Pastry Chef

Brian completed his cooking apprenticeship through Camosun College in 1991 and earned his baking papers in 2002, learning from world-class pastry chef Daniel Vokey of Pâtisserie Daniel.

Brian has won several awards, including a Silver at the Victoria Culinary Exposition and the Grand Prize at the Grand Marnier Challenge, by producing desserts that seduce both the palate and the eye. Most recent developments in his career were the completion of the Advanced Pastry Course under Ken Harper at Malaspina University-College and a chocolate course with Lora Lonesberry of Creating Occasions.

Brian has been the Marina Restaurant’s pastry chef since 2005.
